  • Paragon Espresso is responding to the challenge of enhancing the aroma and flavour of coffee. Traditional espresso brewing methods result in the immediate loss of aroma volatiles to the environment, leading to a loss of compounds that contribute to the coffee’s flavour and aroma. Through our research we know there are more than 100 different aroma volatiles present in coffee, and the unique combination of these aroma volatiles gives coffee its distinctive flavours and aromas. However, many of these aroma volatiles are present in such small quantities that they cannot be detected by the human senses.

  • Developed in collaboration with Zurich University of Applied Science (ZHAW), the Paragon Espresso quickly cools down the extracted coffee as it touches the Paragon Espresso Chilling Rock, locking in more flavours that would otherwise have been lost without the chilling technique. In ZHAW’s research on volatile aroma compounds, they discovered that instantaneous cooling of the extraction would trap these compounds and result in more aromatic and flavour-rich coffees. After three years of research and numerous prototypes, the team successfully designed a versatile and user-friendly coffee tool that captures more aroma volatiles and flavour, providing an exceptional espresso coffee experience.

  • From a commercial perspective, it offers coffee shops and home brewers an innovative way to elevate the flavour and aroma of their coffee, giving them a competitive advantage in the market. Environmentally, the system’s electricity-free operation reduces energy consumption, and its durable, recyclable die-cast aluminium construction and easy disassembly help minimise waste. Societally, the Paragon Espresso has the potential to foster appreciation and understanding of the intricate nuances of coffee flavour and aroma, as well as the underlying science. Paragon Espresso was also recently used by Borum Um at the World Barista Championship 2023 in Athens, winning him 1st place.

  • The Paragon Espresso mount serves as a stable platform for the Paragon Espresso Chilling Rock and can be easily set on top of any cup. This custom mount is height-adjustable to accommodate different cups and coffee machines and is designed with anti-slip rubber grips. The Paragon Espresso Chilling Rocks are a complementary coffee accessory designed specifically for the Paragon Espresso. They offer four key features to improve coffee extraction: a high-density liquid-filled core that maintains low temperatures for an extended period, food-grade titanium-coated 304 stainless steel construction that ensures durability and safety, a unique sphere shape (30mm diametre) that promotes even flow and chilling of coffee extract. Paragon Espresso is also designed without any glues or fasteners. The rubber grips are simply press fit into place on the Paragon Espresso mount, allowing for effortless maintenance and replacement of parts, which makes it more sustainable and cost-effective. Additionally, the products flat profile allows for slimmer packaging, which reduces shipping and storage costs while minimising its environmental impact. By promoting simple assembly and disassembly, the Paragon Espresso extends its product lifespan, reduces waste, and supports a circular economy, all while delivering an exceptional coffee brewing experience.
